Apple Cinnamon Muffins

Always on the quest for healthy snacks for my family, I put together this recipe today.  With plenty of good alternatives to using refined sugar, this recipe gets its sweetness from a little apple sauce and touch of honey.  The ingredients are pretty standard and these muffins make a great breakfast or snacking treat.  Served best fresh out of the oven. Yes, I may have gobbled two straight away.. just for quality assurance purposes of course.  Dense with a touch of sweetness, you’re going to love these! nom nom nom

Servings: 12 muffins

Time to create: 35 min

Ingredients:

  • 3/4 cup of apple sauce
  • 1/2 cup milk
  • 2 tbs honey
  • 1 tbs coconut oil (melted)
  • 1 tbs pure vanilla (or coconut) extract
  • 2 cups gluten free oats 
  • 1 tbs cinnamon
  • 1 tsp baking powder
  • 1 apple diced (approx 1.5 cups)

    Instructions:

    • Preheat oven to 180 C
    • Place muffin liners into muffin tray.  If you don’t have any, you can also give the muffin tin a light coating of olive/coconut oil
    • Combine all wet ingredients into bowl (apple sauce, milk, coconut oil, honey, and vanilla).  Mix well
    • In a separate bowl mix together with a fork all dry ingredients (oats, cinnamon, baking powder)
    • Combine wet and dry ingredients together and stir in apple slices
    • Distribute into muffin tins.  This recipe should easily make 12 small muffins.
    • Place muffin tray into oven and bake for approx 25 minutes or until golden brown.
